The Recipe: Seared Duck Breast with Fresh Green Beans

Ingredients

    • 2 duck breasts, skin on, resting at room temperature
    • Salt and pepper to taste
    • 1 pound of fresh green beans (3 cups chopped)
    • 1 tbsp. coconut aminos (or replace with soy sauce, tamari, or liquid aminos)
    • 1 tbsp olive oil
    • 1 tbsp water

  1. Pat dry each duck breast with a paper towel.
  2. Season the duck breasts with salt and pepper to your taste.
  3. Place the duck in a cold cast iron or traditional pan with the skin side down.
  4. Set the burner to medium heat.
  5. Cook the duck for 15 minutes on the skin side.
  6. Flip the duck and continue cooking for an additional 10-12 minutes.
  7. As the fat renders off, use it to baste the duck for added flavor.
  8. Remove the cooked duck from the pan and let it rest.
  9. If unsure about doneness, use a meat thermometer; it should read 135°F for medium rare and 170°F for well done.
